Tomahawk steaks! Resembling the tomahawk axe, this steak is definitely enough for feed 2 people. It’s a rib steak, left on the bone and cut from the fore-rib. At 2 inches thick it’s an extremely succulent and flavoursome cut of meat.

14th November

Côte de boeuf is without a doubt one of the most impressive cuts of meat. It goes by various names; bone-in prime rib steak, Tomahawk steak and Côte de boeuf and all refer to the same beautiful, intensely marbled, melt-in the mouth, flavoursome cut of meat, which is ideally shared between two due to its impressive size. A really special treat for just £17.50/kg!
Our top tips for cooking and eating:
– Cook from room temperature (not straight from the fridge)
– Do it justice with a smooth glass of red wine
– Don’t add any fat to the pan when cooking as the steak has its own fats
– Cook either low and slow or high and fast (not in between)
– No matter how the steaks are cooked, ensure they are left for at least 5 minutes to rest before serving.
Low and slow
– Sear the steak in an oven-proof frying pan then transfer to a preheated oven (55 degrees) for 3 hours for a medium-rare steak. Ensure the centre of the meat is 55 degrees before removing from the oven.
High and fast
– Place the steak into a preheated oven-proof frying pan, seal it first on the top and then cook in the oven at 200 degrees for:
o 8-10 mins for rare steak
o 12-15 mins for medium steak

steakIn preparation for Halloween on Monday, why not try our spooky “Ghoulash” recipe using our prime diced steak at just £7.89/kg.

INGREDIENTS

  • 1tsp rapeseed oil
  • 400g prime diced steak
  • 1 large onion peeled and chopped
  • 3 garlic cloves peeled and crushed (to keep the vampires away)
  • 1 blood red pepper chopped
  • 1tbsp smoked paprika
  • 1tsp mixed herbs
  • 400g chopped tomatoes
  • 150ml reduced-salt stock (chicken or vegetable)
  • 2 handfuls spinach
  • 150g natural yogurt
  • Rice, potatoes or pasta to serve and a big portion of steamed veggies.

METHOD

  1. Heat the oil in a frying pan and brown the steak along with the onion, garlic, red pepper and paprika.
  2. Add the tomatoes and the stock and bring to the boil then allow to simmer for 10 minutes on the hob or until the sauce thickens and the steak is cooked.
  3. Add the spinach and 150g natural yogurt at the end of cooking to make the sauce a little more moreish.
  4. Serve with rice, potatoes or pasta and some fresh steamed veggies for a scarily tasty dinner (and it’s healthy too).

They are the same price as our home-made chipolatas as £6.83/kg but they are a tasty alternative to chipolatas or pork sausages and a great way to vary your weeknight dinners.

We now produce our own super-lean turkey mince turkey mincein approximately 500g packs (serves 2-4 people).
